Sweetened Sticky Rice with Coconut & Papaya

One of my all time favorite Thai treats is sweetened sticky rice and of course Mama makes sure to make me a batch when I come to the family home. This is just the normal sweetened sticky rice wrapped up in banana leaves.

Today however I found a new favorite.! This is another form of sweetened sticky rice made with coconut cream, coconut, papaya and black beans added in. All the ingredients are placed in a length of bamboo and then the bamboo is roasted on a fire to cook the rice.

Apparently this is a recipe that is really easy to screw up so not everyone will make it. When the rice is done the whole thing is left to cool. Once cooled you peel off the bamboo and have at it. Absolutely delicious!

I just learned that Pookies young brother and Uncle will be making a batch of this sticky rice this week when we burn off the last of the rice fields…rumor has it the best way to cook it is against a tree in the rice field when you burn it off, I guess I’ll find out.

Talen, the sticky rice in bamboo you describe is called Khao Lam here. I love it great hot or cold after an hour in the fridge.

There are also several different flavours. (perhaps regional)

This looks very tricky, not for the nocie cook like you say. Another sweet and coconutty is a favourite of mine as well. I assume Nothing like the sickly bounty bar.

I have tried the top version of sweet sticky rice and enjoyed it but I’ve not seen the black bean one. Wilai’s mother often makes sweet sticky rice to take to the Wat on various Buddhist days so a word in Wilai’s shell and perhaps she can knock up this tasty looking bamboo wrapped receipe. I think I’d enjoy it.
